I do know that there are easier or less time consuming ways to make truffles. But that's the technique I use, that I figured out by myself, and for me, time is not important when it comes to baking or cooking. I enjoy every single minute.
You can use any kind of filling. Fruit filling, caramel filling, as long as it is soft enough. And even if it's not you can still add cream cheese! If you don't have any cookies or chocolate with filling, try adding jam or marmelade, fruit mousse, .. If you want your truffles to by kinda crunchy, add nuts or dried fruit. (between step 5 & 6)
There are no real quantities or set indrigents for truffles. You can make truffles from nearly everything that crosses your way in the kitchen. Have you ever tried non sweet truffles?

I do not know if this recipe works also for normal chocolate without filling, because I have another recipe for this and have never tried to combine them.
